lemon salmon & curried new potatoes

ingredients:

  • 600g small new potatoes
  • 2 salmon fillets
  • 1 lemon
  • asparagus spears
  • 1 x YO! katsu curry sauce sachet
  • 1 x bag of watercress
  • tomatoes, chopped
  • spring onion, slices
  • Sesame seeds

 

method

  1. Boil water for new potatoes.
  2. Whilst boiling, pop each salmon fillet onto 4 asparagus spears in a baking tray & squeeze over 1/2 a lemon. Cut the other hald into thin slices and place on top of the salmon.
  3. Cover with foil and pop in pre-heated oven at 180°C for 25 minutes or until cooked through
  4. Whilst the salmon is cooking, put your potatoes in the boiling water until fork tender
  5. Drain potatoes and leave to dry slightly
  6. Heat the curry sauce in a small saucepan, throw your potatoes in & give them a good shake to coat.
  7. Combine watercress, chopped tomatos and spring onions
  8. Serve sprinkled with sesame seeds, salmon & salad
  9. Enjoy!
