lemon salmon & curried new potatoes

ingredients:
- 600g small new potatoes
- 2 salmon fillets
- 1 lemon
- asparagus spears
- 1 x YO! katsu curry sauce sachet
- 1 x bag of watercress
- tomatoes, chopped
- spring onion, slices
- Sesame seeds
method
- Boil water for new potatoes.
- Whilst boiling, pop each salmon fillet onto 4 asparagus spears in a baking tray & squeeze over 1/2 a lemon. Cut the other hald into thin slices and place on top of the salmon.
- Cover with foil and pop in pre-heated oven at 180°C for 25 minutes or until cooked through
- Whilst the salmon is cooking, put your potatoes in the boiling water until fork tender
- Drain potatoes and leave to dry slightly
- Heat the curry sauce in a small saucepan, throw your potatoes in & give them a good shake to coat.
- Combine watercress, chopped tomatos and spring onions
- Serve sprinkled with sesame seeds, salmon & salad
- Enjoy!
