katsu curry chicken burger

Ingredients:

  • 2 Chicken Breasts
  • 1 Large Egg
  • 25g Flour
  • 80g Panko Crumb
  • 1 Tbsp Curry Powder
  • 2 Burger Buns (Seeded or Brioche)
  • Lettuce
  • Tomato  
  • Red Onion 
  • 500g Sweet Potato 
  • 1 YO! Katsu Curry Sauce
  • Pickled Salad Topping  (grated cucumber, radish and red cabbage dressed in a tsp of sesame oil, and a squeeze of lime juice)

 

Method:

  1. Grab 3 bowls and fill one with the flour, one with the egg (whisk) and the last bowl with the panko crumb and curry powder.

  2. Season the flour and egg.

  3. Butterfly the Chicken and get it as thin as possible.

  4. Dip the chicken in the flour, then the egg, and lastly the panko crumb.

  5. If you want the chicken extra crunchy, double dip in the egg and panko.

  6. Oven baked or Air fry until golden brown and crunchy (Approx 20mins at 200°)

  7. Toast Bun and add the lettuce, tomato and onion.

  8. Top with the panko chicken, heated Katsu Curry Sauce and the pickled salad.

  9. Served with homemade sweet potato fries.
